Ingredients
  

  • 4 4-ounce Chicken option: boneless, skinless chicken breasts pounded to 1/8-inch thickness
  • 4 Pork option: thin pork cutlets or boneless pork chops pounded to 1/8-inch thickness
  • Kosher salt
  • freshly ground black pepper
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tbsp Dijon mustard
  • 2 cups (or more) breadcrumbs Panko or Italian
  • Light cooking oil spray
  • Brown gravy (store-bought or homemade), optional
  • Chopped flat-leaf parsley
  • Lemon wedges

Method
 

  1. Preheat the air fryer to 400°F.
  2. Pound the chicken or pork to 1/8-inch thickness and season with salt and pepper.
  3. Prepare three shallow dishes: one with flour, one with eggs whisked with Dijon, and one with panko.
  4. Dredge each piece in flour, shaking off excess.
  5. Dip into the egg mixture.
  6. Press into the breadcrumbs to coat thoroughly.
  7. Lightly spray both sides with cooking oil.
  8. Place in a single layer in the air fryer basket and cook for 5–6 minutes per side, flipping halfway.
  9. Cook until chicken reaches 165°F or pork reaches 145°F (rest pork for 3 minutes).
  10. Serve with parsley, lemon wedges, and a spoonful of brown gravy if desired.
