I found it interesting that there are only three ingredients that makeup Tabasco Sauce – Red Tabasco Peppers, Vinegar, and Salt.

At our next stop was the Greenhouse where you can see a variety of peppers used in Tabasco’s different sauces. Although most of the peppers utilized for Tabasco Sauce are currently cultivated abroad in Central and South America, as well as Africa, using seeds sourced from Avery Island. All of the peppers are picked by hand when they match the precise shade of red on a small painted stick that each picker has to determine if the pepper is ripe enough. The peppers are then mixed with salt and ground into a pulp called mash.
3. Barrel Warehouse
Once the pepper mash arrives at Avery Island, it is placed into barrels and topped with a thick layer of salt to protect it from impurities, and stored in the Barrel Warehouse. Here, rows upon rows of wooden barrels are filled with pepper mash and aged for three years, allowing the flavors to evolve and the raw pepper mash to gradually mellow. The day we toured the factory the sign said they were producing Habanero Pepper Sauce for Germany, but it looked like they were making Green Pepper Sauce.

The next stop on the tour was the Flavor Lab where you can find many Tabasco-inspired recipes as well as being able to get your photo taken with your favorite giant bottle of Tabasco.
