Sautéed Mushrooms with Caramelized Onions

There’s something special about making dinner outdoors, especially when you’re living the RV life full-time. Whether we’re boondocking in the desert or parked lakeside, grilling is one of our favorite ways to wind down the day. And when we’re firing up the Blackstone Tailgater Combo, one of the most requested sides from Lisa (and let’s be honest—from me, too) is these Sautéed Mushrooms with Caramelized Onions.

They’re savory, rich, and just plain delicious. The onions caramelize beautifully on the griddle, and the mushrooms soak up all that flavor like little sponges of goodness. Whether you’re grilling up a juicy steak or a hearty burger, these mushrooms and onions are the perfect finishing touch.

Blackstone Griddles – Outdoor Cooking Made Easy

Cooking Instructions

  1. Prep the veggies: Gently wipe mushrooms clean with a damp towel. Slice them if desired. Slice the onion thinly and mince the garlic.
  2. Preheat the griddle: Heat olive oil over medium heat on your Blackstone or skillet.
  3. Sauté onions & garlic: Add sliced onions and garlic to the griddle. Cook for 3–5 minutes, stirring occasionally, until the vegetables are softened and just starting to brown.
  4. Add mushrooms: Toss in the mushrooms. Stir frequently and cook for 8–10 minutes, until the mushrooms are browned and the onions are fully caramelized.
  5. Deglaze & finish: Add soy sauce, white wine, salt, and pepper. Cook for another 3–5 minutes, stirring occasionally, until the liquid has evaporated.
  6. Serve immediately with your favorite steak or grilled entrée.

Perfect Pairings

This dish is killer with a grilled ribeye or NY strip, but it also works great with:

  • Smash burgers on the griddle
  • Chicken breasts or thighs
  • Grilled tofu or veggie burgers
  • As a topping for baked potatoes or even scrambled eggs

Pro Tips

  • Don’t overcrowd the griddle — give the mushrooms room to sear.
  • Use a splash of beef broth instead of wine for extra richness.
  • Add a pat of butter near the end for even more flavor.
